Crockpot Potato Broccoli Cheddar Soup

Prepare the Ingredients:
In the crockpot, combine the diced potatoes, broccoli florets, diced onion, vegetable broth, garlic powder, onion powder, salt, and pepper. For added flavor, you can sauté the onions in olive oil or butter before adding them to the crockpot.

Cook the Soup:
Cover the crockpot and cook on low for 6-7 hours, or on high for 3-4 hours, until the potatoes are soft and tender.

Add the Milk and Cheese:
Once the potatoes are fully cooked, stir in the milk and shredded cheddar cheese. Mix until the cheese is melted and the soup is creamy. Adjust the seasoning with additional salt and pepper, if needed.
